VINEYARD
The
grapes come from low-yielding and late-ripening vineyards in Sonoma
County. The grapes were grown without the use of man-made chemicals.
GROWING SEASON
The
2000 growing season started early. Summer was long and cool. The
fall days were warm and the nights cool. The grapes reached maturity
at the end of October and the quality was excellent.
WINEMAKING
The
2000 grapes were harvested early in the morning at the peak of freshness.
The grapes were immediately crushed and cold soaked for 40 hours
for flavor and color extraction. The must was then fermented in
open top fermentors and the cap was punched down every eight hours.
After eight days, the wine was pressed and settled in stainless
steel tanks. It was then racked into 60-gallon French oak barrels
(33% new) and left to age for 20 months.
TASTING
NOTES
The
wine is deep red-purple in color with aromas of black currents,
smoke and fresh dill. Medium-full bodied and smooth with flavors
of black plum, raspberries, and toasty oak. A long finish with notes
of smoky spice and dried cranberries.
